Berry Sexy Salad

Ingredients:

  • 1/4 cup of  blueberries
  • 2 cups of mixed salad
greens
  • Two hard-boiled eggs, halved
  • 1/4 cup of raspberries
  • 1 tbsp of olive oil
  • 1/4 cup of sliced
 strawberries
  • 1 tbsp of lemon juice
  • 1/4 cup of pecans, chopped
  • 1/2 tbsp of apple cider
vinegar

Method of Preparation:
1. Top salad greens with eggs, berries, and pecans.
2. Mix olive oil, lemon juice, and apple cider vinegar.
3. Pour over salad and enjoy!

Note: Feel free to drizzle the dressing lightly over the remainder of the salad and store leftovers in an air-tight container in the fridge. This way, you can grab and go or nibble a little at a time no matter how much time is on the clock!
